And guess what? Those timeless ingredients are still at the heart of the Mediterranean grain bowl we savor today.

INGREDIENTS
For the Bowl
 1 Cup Babcia Tri-Color Quinoa
 1 Cup Cherry Tomatoes
 1 Cup Diced Cucumber
 ½ Cup Diced Red Onion
 ½ Cup Epiros Organic Feta Cheese
 ¼ Cup TASSOS Kalamata Olives
 ¼ Cup Belveder Sweet Pickled Red Peppers
 ¼ Cup Fresh Parsley
 ¼ Cup Fresh Mint
 ¼ Cup Almonds
 Salt
 Pepper
For the Lemon Vinaigrette
 ¼ Cup Dell Alpe Extra Virgin Olive Oil
 2 Tablespoons Piacelli Lemon Juice
 1 Teaspoon Roleski Dijon Mustard
 1 Clove Garlic
 Salt
 Pepper

In a small bowl, whisk together the Dell Alpe Extra Virgin Olive Oil, Piacelli Lemon Juice, Roleski Dijon Mustard, minced garlic, salt, and pepper until well combined. Set aside.

In a large mixing bowl, combine the cooked Babcia Tri-Color Quinoa, halved cherry tomatoes, diced cucumber, diced red onion, Epiros Organic Feta Cheese, sliced TASSOS Kalamata Olives, sliced Belveder Sweet Pickled Red Peppers, chopped parsley, chopped mint, and roasted nuts.

Pour the prepared lemon vinaigrette over the ingredients in the bowl. Gently mix all of the components to coat them with the dressing. Salt and pepper should be added and adjusted as necessary.

In serving bowls, distribute the Mediterranean grain bowl mixture. You may either serve it right away or chill it briefly to let the flavors meld.

If preferred, top the bowls with Epiros Organic Feta Cheese and more chopped herbs as a garnish. A healthy supper can be made entirely out of this Mediterranean Grain Bowl. For more protein, serve it alongside grilled chicken, shrimp, or falafel.
